Creamy Pork and Caramelised Onion Pasta


  • 1 tbsp Atkins & Potts Caramelised Onions
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 pork medallions
  • 1 sprig fresh rosemary
  • Salt and pepper
  • 200ml mascarpone
  • Cooked pasta to serve

Our Method:

  1. Fry the pork medallions and rosemary in the olive oil on medium heat until the meat is golden brown.
  2. Remove the pork from the pan and put to one side.
  3. Add the onion to the same pan and fry until the onion is translucent. Add the garlic and fry for a further minute.
  4. Season with salt and pepper then add the pork back to the pan.
  5. Mix in the caramelised onions and mascarpone and heat gently until well mixed and slightly thickened.
  6. Serve on top of cooked pasta.
