Mini Quiches with Caramelised Onions

Ingredients, for four mini quiches:

  • 300g readymade and rolled shortcrust pastry
  • 3 eggs
  • 200ml whole milk
  • 80g strong cheddar
  • 2 rashers smoked bacon, sliced into strips
  • 1 large mushroom, diced
  • 1 jar Atkins & Potts Caramelised Onions
  • Oil for frying
  • Salt and pepper

Our Method:

  1. Preheat an oven to 190C. Cut the pastry into rounds and use to line mini tart or quiche tins.
  2. Heat a little oil in a small frying pan and fry the bacon and mushrooms until golden brown and cooked. Put to one side.
  3. In a bowl mix together the eggs, milk, cheese and some salt and pepper. Whisk together well then add the cooked bacon and mushrooms.
  4. Add 1-2 tsp of the caramelised onions to each quiche, then fill the quiches with the egg mixture (don't overfill).
  5. Bake in the oven for 15-20 minutes or until golden brown.
