Heat a large frying pan on a high heat and sear the lamb on all sides. Put the lamb into a roasting tin and place in the oven at 200°C for 10-12 minutes or until cooked to your liking.
When the lamb is done, remove from the tray and set aside to rest. Place the roasting dish on a hob and pour in the Atkins & Potts Red Wine & Juniper Sauce. Bring to a simmer, scraping off any bits stuck to the bottom of the roasting dish.
Serve the lamb with couscous and pour the sauce on top.
To add a further twist to this dish, marinate the lamb in cinnamon and cumin before roasting.
