Mussels with Tomato & Basil Sauce


Our Method:

  1. Discard any mussels that are open before cooking.
  2. Warm a large pan on medium heat and add the white wine. Cook for a minute, then add the Atkins & Potts Tomato & Basil Pasta Sauce.
  3. Add all the mussels, turn up the heat and put a lid on.
  4. Leave the mussels to cook until they are open (3-4 minutes), give the pan a shake every now and then.
  5. Serve in bowl with crusty bread to mop up the juices.
  6. Top with a few chopped chives.
