Beef Casserole with Redcurrant & Juniper Jelly

Ingredients, for four people:

Our Method:

  1. Mix the beef with the seasoned flour. Add a little oil to a casserole pan on medium heat, then add the beef. Fry until nicely browned then remove and put to one side.
  2. Add a little more oil to the dish and add the vegetables. Fry for 10 minutes and scrape up any bits from the bottom of the pan.
  3. Add the beef back to the pan and add the Atkins & Potts Beef Stock and Redcurrant & Juniper Jelly.
  4. Preheat the oven to 165°C. Bring everything in the pan to a simmer then put into the oven for around 2 hours or until the beef is falling apart.
  5. Serve with mashed or roasted potatoes and seasonal vegetables.
